For those who know me, I rarely, and i mean rarely leave the city, for any reason. However, when the two of Whistler’s culinary arsenals join forces to open a new restaurant, you hop on the (party) bus, take a seat, and E-A-T! I am talking about Jeff Park and Pat Allan’s new gem in the heart of Squamish : The Salted Vine Kitchen and Bar. The restaurant itself is a part of the city’s oldest establishment with a warm, welcoming, rustic atmosphere, which is very refreshing to see in an upscale dining room. The reclaimed wood panels, the large windows that allow abundant natural lights to come through, and the stunning bar (obviously) make everything about this restaurant, instagram-perfect!

Chef Park’s intention with the menu is to highlight the very best of Pacific Northwest Cuisine, showcasing the sustainable, organic, and local ingredients, from Ocean-Wise Approved Seafood (Look at those beautiful Oysters!), naturally grown B.C Beef and Albertan Lambs, and other local seasonal produces from the farms around the restaurant.

To elevate the dining experience, Dave Warren, the gentleman in charge of the bar, has curated and created a phenomenal cocktail program and extensive wine lists. Whether it’s the crisp Pinot Grigio to go with the oysters, a rich merlot for the Wagyu, or a night cap by the bar, there is a perfect drink for it.

The restaurant opens from Tuesday through Saturday from 5-10 p.m. Lunch and Brunch services are coming this Fall.
